Pammi's lajawaab creamy paneer




Pammi's lajawab creamy paneer:

Ingredients:
1.paneer-250gms
2.cashewnuts-2tbsp
3.raisins-2tbsp
4.coconut milk-1 cup
5.poppy seeds-2tbsp
6.canned fruit cocktail-1
7.green peas
8.ginger
9.oil-4 tbsp
10.kasuri methi-1tsp
11.clove-1
12.cardamom-4
13.salt to taste
14.green chillies-2
15.sugar to taste


Procedure:

Soak the paneer pieces in salt water for 20 mins.Now heat oil and lightly fry them and keep aside.Make a paste of cashewnuts,raisins,ginger,poppy seeds,green chilli and 50 gms of paneer.Now add a clove to the pan. Then add the paste and fry until oil separates.Now add coconout milk,green peas,salt and sugar and cook until oil separates.Now add 4 tbsps of water and bring to boil.Finally add the paneer pieces,kasuri methi,canned fruits and crushed cardamoms and serve garnsihed with raisins and fruits.Tastes awesome with butter naan/pulao :)

Pammi's rava idli





Ingredients:

1.Rava/suji/semolina-2 cups
2.Grated coconut-2tsp
3.Split bengal gram/chana daal-2tsp
4.Black gram/urad daal-2tsp
5.Cashewnuts-2tsp
6.Curry leaves-2tsp
7.Baking powder-1/2tsp
8.Curd-500gms
9.Mustard seeds-1/2tsp
10.Slit green chillies-5
11.Salt to taste
12.Ghee/clarified butter-2tbsp


procedure:

Fry the cashew nuts in ghee(clarified butter) until golden and keep aside.Now add mustard seeds and curry leaves.When the seeds start crakling,add the bengal gram,black
gram and green chillies and fry for 2 mins.Now add semolina and stir in a low flame.Add baking powder,salt,grated coconut and crushed fried cashews.Continue to stir the
mixture in a low flame for about 5 mins.
Now set aside the mixture and let it cool down to room temperature.Now add curd to the mixture to make a thick batter.U can add little water if u want.Grease the idli
stand with oil and pour the mixture in the stand.Take water in a pressure cooker and place the stand in such a way so that the water doesnt touch the idlis.Now close
the lid and cook for 15mins.Open the pressure cooker only after all the vapour has come out.Take out the idlis and serve hot with chutney and sambhar.

*Note: 1.Keep watch so that the mixture does'nt turn brown in colour.
       2.U can use sweet curd for those who want a sweet taste in your idlis.

Matar Paneer:

Ingredients:
1.paneer cubes-250 gms
2.peas-1 cup
3.onions-2(big)
4.tomato puree-1 cup
5.ginger-1 "
6.garam masala-1tsp
7.grated paneer-2tbsp
8.yoghurt-2tbsp
9.salt to taste
10.sugar to taste
11.oil
12.green chillies-4
13.red chilli powder-1/2 tasp
14.turmeric powder-1/2tsp
15.coriander powder-1/2 tsp

Procedure:

Make a fine paste of the onions.Half boil the peas and keep aside.Heat oil in a pan and fry the paneer n keep aside.Now add the onion paste and fry until it turns 
golden and oil separates.Now add the grated ginger,red chilli powder,turmeric powder and coriander powder and fry for another 1 min.you can add sprinkles of water if 
necessary.Now add the tomato puree and stir until oil separates.Add yoghurt and again cook for 2 mins.Add salt,sugar and green chillies.Now add 1 cup of water and bring
to boil and add the peas.Now as soon as the gravy starts thickening and oil separates,add the fried paneer and garam masala.Cook for 1 min and serve in a serving dish 
garnished with grated paneer.You can enjoy this wonderful dish with naan,paratha,pulao or fried rice.

Pammi's prawn malai curry



prawn malai curry:

ingredients:
1.prawns-500gms
2.coconut grated-1 cup
3.onions-2
4.ginger-1'
5.green chillies-4-5
6.cashew-10-12
7.poppy seeds-2tsp
8.salt to taste
9.oil
10.turmeric powder-1/2 tsp
11.bay leaf-1
12.cardamom-5


Procedure:

Clean and devein the prawns keeping the head and the tail intact.Wash them and marinate with salt and turmeric and keep aside.Now grate coconut and extact the milk.Now 
make a paste of the cashew,poppy seeds and green chillies.Separately make a paste of onions and ginger and keep aside.Now heat oil in a pan and fry the prawns and set 
aside.Heat 4-5 tbsp of oil.Add a bay leaf and the onion paste.Fry till its golden brown and oil separates.Now add the cashew paste and stir.Fry for another 4-5 mins.Add 
coconut milk,salt and sugar and cook until oil separates.Now,add half a cup of water and bring to boil.Add the prawns and crushed cardamom.Cook for another 3-4 mins and 
serve hot with steamed rice.

Pammi's Multi-Coloured Ice Cubes:





Beat the heat this holi with multi-coloured ice cubes in your favourite drink!!
Ingredients:
1.Edible colours-red,blue,yellow,orange,green,pink
2.Water

Procedure:
Pour water in an ice tray and add 1 drop of each colour in different boxes of the tray and refrigerate. Serve these coloured ice cubes with your favourite drinks. You can even serve plain water with multi-coloured ice-cubes.Entertain your guests this holi in a surprisingly colourful way!! Happy Holi!!!

Pammi's Masala baingan




Masala baingan:
Ingredients:
1.Brinjal(small ones)-12
2.Tomato(chopped)-1(big)
3.Asafoetida(hing)-1/4th tsp
3.Green chillies-5
4.Turmeric powder-1/2tsp
5.Chilli powder-1 tsp
6.Cumin powder-1 tsp
7.Coriander powder-1 tsp
8.Plain curd-1/2 cup
9.Sugar n salt to taste
10.Oil-4tbsp
11.Cumin seeds-1/2 tsp
12.Fenugreek seeds-1/2tsp
13.Bay leaf -1
14.Cardamoms-4 to 5

Procedure: Wash the brinjals and cut them lengthwise into halves leaving the upper part of the stem intact.Now,marinate the brinjals with salt and turmeric and keep them aside for 10 mins.Meanwhile,make a paste of the curd and the powders with little water.Heat oil in a pan.Deep fry the brinjals until they turn golden brown and set aside.Now,add fenugreek seeds,coriander seeds and bay leaf.Add chopped tomatoes and fry for 2-3mins.Add the paste and stir.Fry until oil separates.Now add 1 cup water,salt and sugar.Cook until the gravy thickens and oil separates.Add crushed cardamoms,fried brinjals and chopped green chillies and remove from the flame.Your masala baingan is ready!

Pammi's crunchy sweet and sour salad


Ingredients:
1.carrot-1
2.cabbage-3 leaves(blanched and cut into square shapes)
3.cucumber-1
4.green chilies-3
5.vinegar-4tbsp
6.honey-3tbsp
7.salt to taste
8.soy sauce- 1/2tsp

Procedure:
                Wash the carrot and cucumber and cut into thin strips.Blanch the cabbage leaves and cut into square shapes.Chop the green chilies.For the dressing,mix all the other ingredients in a bowl and toss the vegetables.Now let the salad rest for half and hour in the refrigerator.Serve chilled :)

Pammi’s Bok phool fritters/humming bird tree flower fritters


Ingredients:
                 ·         Bok phool-10    
                 ·         Gram flour/besan-1/2 cup
                 ·         Red chilli powder-1tsp
                 ·         Turmeric powder-1/2tsp
·                                            Salt to taste
                 ·         Poppy seeds-1 tbsp
 ·         Oil for frying

Procedure:
Remove the flower tentacle that is within the bok phool and then wash it gently.
Mix besan, salt, red chilli powder, turmeric powder and poppy seeds with little water to make a smooth batter. Now dip the flowers one by one in the batter and deep fry them until golden brown and crisp. Serve hot as a snack or with steamed rice, ghee and green chilli.
