Pammi's Jhatpat dhoka'r dalna

Ingredients:
1.Besan/gramflour-1cup
2.coriander seeds-1tsp
3.cumin seeds-1/2tsp
4.bay leaf-1
5.turmeric powder-1tsp
6.chilli powder-1tsp
7.cumin powder-1tsp
8.asafoetida powder- 1/tsp
9.kasuri methi-tbsp
10.ginger paste-1tsp
11.salt and sugar to taste
12.slit green chillies
13.potato-1(cut into small cubes)
14.garam masala(ground cardamom,cinnamon and cloves)-1tsp
15.ghee-1tsp
Procedure:
Take besan in a bowl.Add salt,coriander seeds,chopped green chillies,asafoetida and water and mix well until it acquires a smooth thick consistency.now heat oil in a pan and fry the batter until you get the smell of the besan and it has slightly changed its color.Now take the fried paste on a plate and spread it evenly and let it set for 10mins.After that cut the dhoka into your desired shape and fry them until golden and keep them aside.Now heat oil,add cumin seeds,bay leaf and the potatoes.Fry for sometime.Now add ginger paste,chilli powder,turmeric powder,cumin powder,asafoetida,salt and sugar and fry until oil separates.Now add 2cups of water and cook until the potatoes are cooked.Now add the fried dhoka and cook for another 5 mins. Now add kasuri methi and garam masala and turn off the gas.add 1tsp ghee and cover it and keep for around half an hour before serving.
