Pammi's pancakes with caramelised apples and condensed milk

Ingredients:

2 cups flour
2 1/2 teaspoons baking powder
3 tablespoons sugar
1/2 teaspoon salt
2 large eggs
1 1/2 to 1 3/4 cups milk
2 tablespoons melted butter
2 tsp raisins

For caramelised apples:
1. apple slices- 1 cup
2. sugar

For garnishing:
1.condensed milk

Preparation:
Sift together flour, baking powder, sugar, and salt. In a separate bowl, whisk together the eggs and 1 1/2 cups of milk; add to flour mixture,
 stirring only until smooth. Blend in melted butter and raisins. If the batter seems too thick to pour, add a little more milk. Cook on a hot,
greased griddle, using about 1/4 cup of batter for each pancake. Cook until bubbly, a little dry around the edges, and lightly browned on
the bottom;turn and brown the other side.
Now in a hot pan , add the sugar and melt it  and then add the apples to it. Toss the apple in the caramel for 1 min and switch off the gas.
In a serving plate place the pancakes cut into triangle shapes and place the caramelised apples on top of it. Pour condensed milk over the
pancakes and serve.

Pammi's creamy pineapple pudding

Creamy Pineapple pudding :
Ingredients:
1.eggs-4
2.milk -2 1/2 cup
3.sugar-3/4th cup
4.pineapple essence-1tsp

 For garnishing
1.fresh cream-1 cup
2.fresh pineapple pieces-10-12
3.caramelised sugar crystals


Procedure:
Break eggs into a bowl. Add sugar, pineapple essence and mix gently with a whisk. Add milk and mix. Pour the mixture in a container and place it in the cooker. Cover with lid and steam for twenty-five to thirty minutes. Do not use the whistle. Take out the pudding and refrigerate it.

Now take a serving plate and pour fresh cream in it.  Place the pudding in the middle and decorate the plate with pineapple pieces and caramelised sugar crystals. Pammi's creamy pineapple pudding is ready to serve!!
