malai kofta


ingredients:
1.paneer-300gms
2.potato(peeled and boiled)-1
3.fresh cream-1 cup
4.canned fruits(preferrably fruit cocktail)-1 cup
5.ginger paste-1/2tsp
6.hing-1pinch
7.salt and sugar to taste
8.kasuri methi-1tsp
9.cashewnuts and raisins
10.oil
11.green chillies-3/4
12.cardamoms-4

procedure:
  Mash the potatoes and paneer and add chopped green chillies and salt and mix them well and make a dough out of it. Now take a portion

of the mixture and make a kofta sized ball out of it.Press it in the middle and fill it with fruits,raisins and cashewnuts and cover it properly

and shape it into a fine round ball.Repeat the same with the rest of the dough.Now heat sufficient oil n a pan and deep fry the koftas and

keep aside.For the gravy,make a paste of 50gms of paneer and 1cup fresh cream.Now heat oil in a pan,add crushed cardamoms,ginger

and hing .Then add the paste and fry until oil separates from the gravy.add salt and sugar and 1/4th cup of water.add the rest of the fruits

and cook till oil separates.In a serving bowl,place the koftas and add the gravy over it and sprinkle some kasuri methi over it.Your delicious

and creamy malai kofta is ready!!

jungli laal maas


Ingredients
•Mutton,cut into 1 inch cubes 600 grams
•Dried red chillies 5-6
•Coriander seeds 2 tablespoons
•Cumin seeds 1 teaspoon
•Pure ghee 4 tablespoons
•Cinnamon 2 stick
•Green cardamom 5-6
•Black cardamoms 2-3
•Salt to taste
•Ginger-garlic paste 1 tablespoon
•Red chilli paste 3 teaspoons
•Bay leaves 2
•Onions,chopped 3 medium
•Yogurt 1 cup
•Garlic 10-12 cloves
Method
Grind red chillies, coriander seeds and cumin seeds to a powder.

Heat ghee in a pressure cooker. Add cinnamon, green cardamoms and black cardamoms and sauté till fragrant.
Add salt, ginger-garlic paste and red chilli paste to the mutton pieces and mix well.

Add bay leaves and onions to the pressure cooker and sauté for 2-3 minutes or till fragrant.Add yogurt to mutton and mix.Add garlic cloves and 2 tbsps of the powdered spices to the pressure cooker and sauté for 2 minutes.

Add marinated mutton pieces and sauté on high heat for 2-3 minutes.Add 1½ cups water and mix well. Cover the cooker with the lid and cook under pressure till 5-6 whistles are given out.

Open the lid when the pressure reduces completely, transfer into a serving bowl and serve hot.

pammi's pani puri


ingredients:
For the gol gappas
1.suji-1 cup
2.flour-2tbsp
3.baking powder-1/2tsp
4.salt to taste
*u can also use rice flour(optional)

For the imli ka pani
1.tamarind pulp-1/2cup
2.sugar/jaggery according to taste
3.salt
4.chaat masala-1tsp
5.mint leaves
6.water-1 and 1/2 cup
7.boondis

For the filling-
1.potato(diced)-1
2.chick peas-1/2 cup
3.coriander leaves
4.chaat masala
5.salt
6.red chilli powder

procedure:
Make a dough with all d ingredients mentioned above for the gol gappas and keep aside.
Now pressure cook the chick peas and the diced potatoes and mix salt,chopped coriander leaves,red chilli powder and chaat masala to it. Now take tamarind pulp in a bowl and add sugar/jaggery,salt,chaat masala,mint leaves and water and mix well.Sprinkle boondis on top.Now roll out small puris and deep fry them.your pani puri is ready.
