Elo jhelo recipe:
Ingredients:
For the dough:
1.Refined flour-2 cups
2.refined oil-4tbsp
3.salt-1/2tsp
4.lukewarm water for kneading
For the sugar syrup
1.water-1 cup
2.sugar-1 cup
3.cardamom pods-2
Oil for frying
Procedure:
Knead the dough well with all the above ingredients and keep aside.In a pan take water,sugar and cardamom and set in a low
flame.Now make small balls out of the dough.Take a ball and roll it in the shape of a puri.Now take a knife and make slits
not upto the edges as shown in the picture.Now start folding the puri from both the ends vertically from one side to
another.Repeat the process and make all the elo jhelos.Now take sufficient oil in a kadhai and heat it.Once the oil is
hot,simmer the flame and start frying the elo jhelos until golden brown.Meanwhile,check the sugar syrup if it has reached
one string consistency.Now add the fried elo jhelo to the sugar syrup and stir in .While stirring turn off heat after 10-
20 secs.Take out the elo jhelos from the syrup after 10 mins and transfer them into a separate bowl.It is a very delicious
tea time snack that can be stored away in a tight container for a long time.
