Pammi's egg momo




Pammi's egg momo:
Ingredients for the dough:
1.Flour-1 cup
2.Salt-1 pinch
3.Water for kneading the dough
4.1tsp oil

Ingredients for the filling:
1.Egg-4 eggs
2.Onion-2(chopped)
3.Green chillies-2-3(chopped)
4.Coriander leaves(chopped)-1 tbsp
5.Oil

Procedure:
          Heat oil in a pan.Now add chopped onions and fry them till transparent.Add beaten eggs and stir continuously
until scrambled.Now add chillies and salt to taste and fry for 5 mins.Add chopped coriander leaves and keep the filling
aside.
          Now make a dough with the above ingredients and make balls and keep them covered with a moist napkin.Take each dough ball and on a lightly dusted board, roll each dough ball into a thin circle of about 2-3 inch diameter.Apply water with your finger tip or with a small pastry brush towards the circumference.Place 1 or 2 tsp of stuffing in the center.    lift one side of the edge and start pleating.Join all the pleats in the center.Grease a steamer pan with oil.Arrange the momos in the pan, keeping space between them.Steam in an electric cooker or a steamer pan. You can also use idli pans or pressure cooker to steam.Steam the momos for 5 to 6 minutes till the outer cover becomes transparent.Don’t over cook as then the outer cover becomes dense and chewy.The steaming time may vary upon the thickness of momo's cover.When you touch the momo then dough should not feel sticky to you. This means they are done and the momos will have a transparent look.Serve momos hot with red chilli-garlic chutney,green chutney, spicy schezwan sauce or tomato sauce.

Shorshe ilish

Ingredients:

1. hilsa fish
2. mustard seeds-4-5tbsp
3. green chillies-7-8
4. salt
5. turmeric powder
6. mustard oil

procedure:

Marinate the fish pieces with turmeric and salt for 15 mins.Now make a fine paste of mustard seeds and green chillies with little water.Add this paste and 3-4 tbsp of mustard oil to the fish pieces . Transfer them into a kadhai,cover with lid and cook in a low flame for 15 mins. Garnish with slit green chillies and a few drops of mustard oil. Serve hot with steamed rice.

Pammi's Chilli Babycorn

Chilli babycorn
Ingredients:
1.babycorn-1 can
2.capsicum-2(cut into square shapes)
3.green chillies-5(slit them lengthwise)
4.onion-2 large(diced)
5.garlic-4(chopped)
6.hot n sweet tomato sauce-4tbsp
7.soya sauce-2tsp
8.chilli sauce-2tbsp
9.red chilli sauce-1tbsp
10.salt to taste
11.cornflour-4tbsp
12.flour-1tbsp
13.oil for frying

Procedure:
Make a thick batter by mixing flour,cornflour,salt and soya sauce and water.Cut the babycorns into small bite sized

pieces. Now dip the babycorns into the batter and deep fry them and keep aside.Now in that hot oil add chopped garlic,stir

for 1 min,add onions and fry till transparent.Add the chilles,capsicum, babycorns and salt to taste.Fry for another 1 min.
Now add the sauces and mix well.Fry for another 2 mins and serve hot.
* You can add 1 tbsp cornflour mixed with water after adding the sauces which will make a thick gravy or you can leave it

as it is depending upon your taste.Tastes awesome either ways.

Pammi's cheesy dip





Chessy dip
 Ingredients:
1.Amul chees spread
2.Tomatoes-1 chopped
3.Parshley-1tsp
4.Chillies-2 chopped

procedure: Mix all the ingredients well and serve with chips,salted biscuits or any other snack of your choice.

Pammi's corn fritters




Corn Fritters
Ingredients:
1.Corn cob-1
2.Potato-1(boiled)
3.Onion-1(chopped)
4.Green chillies-2 chopped
5.Coriander leaves-1 tbsp chopped
6.Bread-2 slices
7.Cornflour-1 tsp
8.Salt to taste
9.Oil for frying

Procedure:
Take out all the corn kernels from the cob and pressure cook it until soft.Now coarsely grind the kernels.Now take
all the above ingredients in a bowl and mix well to make a dough.Now make small flat balls from the dough and deep fry
them in oil.Serve with tomato sauce or any chutney of your choice.

chutney lassi




Ingredients

Yogurt 21/2 cups

Fresh mint leaves, chopped 12-15 
Fresh coriander leaves 1/4 bunch
Ginger, chopped 1/2 inch piece
Green chilli, chopped 1 
Raw mango, seeded and sliced 1/2 small
Salt to taste
Black salt (kala namak) to taste
Roasted cumin powder 1 teaspoon
Ice cubes as required

Method

Put mint leaves, coriander leaves, ginger, green chillies, raw mango, salt, black salt and roasted cumin powder in a mixer. Add little water (you can use yogurt water) and grind to a fine paste.

Add yogurt, one cup water and ice cubes and blend again.

Pour into glasses and serve chilled.

* u can also add 1tsp of sugar for those who hav a sweet tooth 

Star fruit juice




The recipe is very easy .You just have to blend starfruit,sugar and and salt in your juicer,add 
ice cubes and sprinkle some chat masala over it and enjoy this refreshing drink anytime!

Pammi's sweet potato gulab jamus






recipe: 
Sweet potato mithai:

Ingredients:

1. sweet potatoes-1kg
2. refined flour-100gms
3. oil for frying
4. baking powder -1pinch

for sugar syrup:

1.sugar-2 ½ cup
2.water-1 cup
3.cardamom-5(crushed)

procedure::

Boil the sweet potatoes and let it cool. 
Peel off the skin and mash them. Add the flour and baking powder and make a dough. 
Now make small balls out of it. Heat 2 cups of oil and now fry the balls until golden brown in colour.
 Meanwhile, take water and sugar in a pan and bring to boil, stirring from time to time. 
Add cardamoms and cook till the syrup reaches a 1 string consistency. Turn off the gas and add the 
fried balls to the syrup. Let it cool and keep aside until the balls totally soak the syrup. 
* note: the balls must be warm while soaking them in hot syrup.

Pammi's berry chutney



Ingredients:
fresh  mulberrries- 1 cup
fresh strawberries- 1 cup
sugar-3/4th cup
cumin seeds-1/4th tsp
fennel seeds-1/4th tsp
dried red chillies-2
salt-1 pinch

Method:
Heat oil in a pan.Add red chillies and the  seeds.When they crackle,add the fruits,salt n sugar n stir until d fruits r cooked and the chutney is sticky.Cool n serve.

Pammi's homemade yummy baby corn pizza



Ingredients:
1.pizza base -1
2.baby corns- 3 to 4
3.capsicum(cut into rings)-1
4.onion(cut into rings)-1
5.tomato(de seeded and cut into cubes)-1
6.jalapenos (optional)-2 to 3
7.curd -2tsp
8.salt to taste
9.turmeric powder-1/4th tsp
10.red chilli powder-1/4th tsp
11.hot and sweet tomato sauce
12.pizza cheese(grated)


Procedure:

Take curd,turmeric powder,red chilli powder and salt in a bowl and mix well. Now add all the vegetables except the jalepenos to this
mixture and mix well and keep in the refrigerator for 2hours. Now take the pizza base,spread enough tomato sauce over it with the help of
a spoon.Now place the toppings of your choice in any way you want.Spread lots of grated cheese on top and place the pizza in the oven
for 10-12 mins at 180' c. Your homemade yummy babycorn pizza is ready to serve.
*note: You can cut the babycorns in any shape and size you want.Choose the toppings according to your wish and enjoy your homemade
pizza .
